Summertime is here folks and what better way to enjoy summer than with strawberries and rhubarb combined into a mouth watering compote! Rhubarb itself has an amazing tartness and when mixed with the natural sweetness of strawberries, it really makes for a refreshing flavor!
Recently, I ate one the best strawberry and rhubarb pies and I could not resist creating my own recipe to incorporate these two beauties! So, since both rhubarb and strawberries are in season, I went to my favorite farmers market and bought some local organic strawberries and rhubarb and started cooking! This recipe is SO easy to put together and makes for a tasty treat to add to bread, ice cream, oatmeal, scones, or whatever your heart fancies! Great ready to taste some amazing flavor profiles using only a few ingredients!
2 cups diced strawberries
2 cups diced rhubarb
1 tbsp lemon juice
1/2-3/4 cup coconut sugar (you could use whatever sugar or sweetener of choice and add or more less depending on your desired sweetness)
1/4 cup water
1. Combine the strawberries, rhubarb, lemon juice, coconut sugar, and water in a medium sized sauce pan.
2. Bring it to a boil and let it cook on low to medium heat for about 25-30 minutes. Cook less or longer depending on how thick you want it.
3. The sauce can be served cold or warm. Keep refrigerated
