Vegan Breakfast Burritos

These breakfast burritos are a quick and easy recipe that will surely get your taste buds going! These are perfect for a morning where you have a little extra time and you want to spice up your breakfast. The awesome part is they work great for any meal of the day, so no need to save this deliciousness for just breakfast!

Serves 4


4 Tortillas (you can use any tortillas you like)

1 small shallot

2 cloves garlic

1 package Soyrizo (I used El Burrito Organic Soyrizo)

8 oz firm tofu

½ c chopped cilantro


2 slices vegan cheese (this is optional-I used Chao Tomato Cayenne)

1 small lime

1 avocado

¼ tsp turmeric

2 Tbsp nutritional yeast

2-3Tbsp coconut aminos (Tamari or Soy sauce could be used instead, I prefer sweet over salty flavor)




Crumble tofu in a pan. Add turmeric, nutritional yeast, coconut aminos, salt, and pepper. Cook on medium heat for 5 minutes, or until tofu is heated.


Chop shallot and cook on medium heat until translucent (I used a non-stick pan so I did not add any oil). Add in Soyrizo and garlic and cook 8 minutes, or until browned.


In the meantime, chop up the cilantro, slice up the avocado, and gather the salsa, lime, and vegan cheese.

After both the tofu scramble and Soyrizo are cooked, it is time to assemble!

Add the Soyrizo, tofu scramble, cilantro, salsa, lime juice, avocado, and cheese to a tortilla. Fold up and enjoy!
